Endive Spears with Tuscan White Bean Radicchio Salad w/Raspberry White Balsamic & L'arte Tuscan EVOO
INGREDIENTS:
PREPARATION:
1. Mix together beans, radicchio, vinegar, olive oil, chives, salt and pepper in a small bowl. Taste and add more vinegar if wanted.
2. Trim base from endive heads and separate endive into single leaves.
3. Spoon bean mixture into each leaf. Enjoy!
- 1 can of cannellini or Great Northern beans, rinsed and drained
- 3/4 cup finely chopped radicchio
- 1 tablespoon of L'arte Raspberry White Balsamic
- 2 tablespoons of L'arte Tuscany "Nuovo" EVOO
- 2 tablespoons chopped chives
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 3 large heads Belgian endive
