Fagioli - Traditional Tuscan Beans
INGREDIENTS:
PREPERATION:
Put all above ingredients except for the beans into a saucepan and slowly heat, never letting it quite simmer, so that eventually, after about 20 minutes or so, the garlic is soft but hasn’t been browned. If it accidentally starts to simmer too much just take it off the heat and let it cool down, then put it back on the low heat. Cooking it all this way imparts all of the flavor into the olive oil.
Add 1 can of white cannellini beans with the bean juice as well to the saucepan, now bring up the heat and allow to simmer, still at a lower heat, for about 15-20 minutes or until the beans have soften quite a bit and mixed with the bean juice and olive oil. Now add 2-3 more cans of drained beans and allow to heat up over about 5-10 minutes, mixing it all together well. Add salt and pepper to taste.
When serving pour a little bit of the fresh L’Arte dell’Olivo "Nuovo" Olive Oil over the beans. Yum!

- 6-8 whole cloves of garlic
- 8-10 sage leaves
- 2-3 sprigs of rosemary (sprigs should be at least 2 inches long)
