Nuovo EVOO Mashed Potatoes
INGREDIENTS
PREPARATION:
1. Bring water to a boil and add potatoes, garlic and 2 teaspoons salt and continue to boil until potatoes are tender, about 15 minutes.
2. Drain the potatoes and garlic, saving just 1 cup of cooking liquid.
3. Mash the potatoes and garlic together, then use the cooking liquid to thin to the consistency you prefer.
4. Add salt and pepper to flavor, mix in L'arte Nuovo Olive Oil (we like our mashed potatoes chunky, but you can use a food processor to smooth it out when adding the olive oil)
5. Serve and top with additional L'arte "Nuovo" Olive Oil, enjoy the wonderful flavor!
- 2 pounds of your favorite kind of potatoes peeled and cut into 1-inch chunks
- 10 garlic cloves, peeled ( we like to add more! )
- Salt
