Roasted Vegetables with L'arte Olive Oil

1. Preheat oven to 350F. Wash beets leaving them wet and wrap individually with tin foil. Place in roasting pan and bake for 1 1/2 hours or untill they are tender. (poke a thin bladed knife right through the foil to test). When tender, remove from oven and let cool in foil.
2. Turn oven to 450F
3. Core and seed the peppers and cut them into quarters. (I chose to use 4 red bell peppers instead of two). Drizzle a large roasting pan with oil and place the peppers, shiitakes, onions, carrots, corn, green beans and beets in. Use two pans if you have to as it is imperative that you roast these all in one layer. Drizzle liberally with olive oil, sprinkle with salt and pepper, and place in oven.
3. Cooking time for the recipe states 2 1/2 hours but mine were done in almost and hour so check carefully depending on your oven!
Makes 4 main course dishes or 8-12 side dishes.

- 4 small to medium beets
- 2 red bell peppers (only use red or yellow peppers for this or the results will be less sweet)
- L'arte dell'Olivo Extra Virgin Olive Oil
- 4 ounces of shiitake mushrooms, stems removed and discarded
- 8 small carrots peeled, or 2 medium carrots peeled and cut into quarters the long way.
- 1 ear of corn, shucked and cut into quarters the long way
- 4 spring or small onions cut in half
- 1 large tomato, peeled , cut into 16 wedges, seeds and juice removed
- Salt and and freshly ground pepper
- 8 ounces of green beans.
